This is a Grade 1 washed processed green coffee from the Guji zone of the Oromia region of Ethiopia. There, the Mormora farm sits at just above 2,200 masl in the fertile clay of a dense and wet forest where the heirloom coffee trees benefit from a natural mix of shade, sun, and more mild temperatures.

Many Ethiopia coffees are known for their natural, dry process, but this Guji is hand picked and processed at a local communal washing station where the green coffee is graded, depulped and fermented underwater before being laid to dry on the traditional African drying beds.

Some people prefer the distinct flavors many natural Ethiopia coffees produce, but we really like this washed Danse Mormora. The lemon notes come out immediately when cupping, and it yields a super clean cup. We've been drinking it nearly every morning since we brought it in.
